Cheese Muffin Recipe
These Cheese Muffins are really tasty!
You can have them for breakfast or serve with lunch or dinner.
They are best served warm, but still taste good when they cool down.
This recipe makes 6 muffins.
Prep time: 5 min Cook Time 20-25 min
Ingredients:
- 3/4 cup regular all-purpose flour
- 1 tablespoon white granulated sugar
- 1/2 tablespoon baking powder
- 1/4 teaspoon salt
- 1 1/2 cups of shredded cheddar cheese (or jack or swiss)
- 1/2 cup milk
- 1 egg
- 2 tablespoons melted butter (1/4 of a stick)
Directions:
Pur dry ingredients in a bowl and whisk (mix) together.
Stir shredded cheese into the dry ingredients.
In a 2 cup or larger measuring cup, measure your milk, add the egg and add the melted butter. Mix together.
Pour the wet ingredients into the dry ingredients and stir until just combined (no flour is visible). Do not overmix.
The dough will be very thick and wet.
I used an ice cream scooper to scoop the dough into 6 muffin tins. Use a spoon or whatever you have on hand.
I used cupcake liners, but you can grease the muffin wells with butter instead. If you have small muffin tins, you may get 7 muffins from this.
Bake at 375 degrees for 20-25 minutes until golden brown on top.
Serve warm. Enjoy!
