Peanut Butter Blondie Bars from the Disney Fantasy
The sweet shop Sweet on You aboard the Disney Fantasy serves tasty treats, including hand-crafted ice cream and gelato.
This recipe from Kelly Vanarsdall, Food and Beverage Standards Manager, Disney Cruise Line, is a great one to make with the kids.
After the blondies cool, bring the family together for a decorating party and get creative with all of your toppings.
Peanut Butter Blondie Bars
Ingredients:
- 1 cup white chocolate chips
- 1 stick unsalted butter
- 4 tsp creamy peanut butter
- 3 large eggs
- 1 cup brown sugar
- 1¼ cups flour
- ¼ cup pecans, chopped
- Candy to garnish (sprinkles, m&ms, mini choc chips)
Chocolate Ganache:
- 1 cup heavy cream
- 2 cups dark chocolate chips
Directions:
1. Preheat oven to 350 degrees F
2. Melt the chocolate, peanut butter, and butter in a pan over low heat (or use a double boiler). Then let cool for 3 minutes.
3. Mix the eggs and brown sugar with an electric mixer until thickened and smooth.
4. Slowly add the warm chocolate mixture into the eggs and sugar, stirring constantly. (If you add the hot mixture all at once, it could scramble the eggs.)
5. Gently stir in the flour and pecans into the chocolate mixture.
6. Pour the mixture into an 8×8 or 9×9 greased baking pan and spread out evenly.
Helpful Hint: You can spray cooking oil on the pan to prevent sticking OR you can cut parchment (wax) paper to fit into the pan with the edges hanging over the sides of the pan. Then you can LIFT the blondies out of the pan by the edges of the wax paper and place on a baking rack to cool. Don’t cut brownies until cooled.
OPTIONAL: If you don’t want to make the ganache, you can sprinkle chocolate chips or m&ms or white chips… onto the batter prior to cooking.
7. Place pan in the oven to bake at 350 for approximately 45 minutes. (or until a toothpick inserted in the center comes out cleanly) Then cool on a baking rack.
8. Once the blondies are cool, cut out with a 2.5-inch cookie cutter (or a round glass cup) -OR- just cut into squares or rectangles.
9. For the ganache, heat the heavy cream on the stove until just reaching boiling point (don’t boil).
10. Place chocolate chips in a separate bowl.
11. Pour the hot cream over the dark chocolate chips and stir in until the chocolate has melted. Let the mixture cool a bit but not harden.
12. Carefully, dip blondies into the melted chocolate. Don’t burn your fingers.
