Easy Blueberry Muffins in Under 30 Minutes

These blueberry muffins are so easy to make and really tasty. My family loves them. As long as I have blueberries in the house, I can whip these up in no time.
- Prep Time 10 Minutes
- Cook Time 20 Minutes
- Total Time 30 Minutes
- Serves 10 People
Ingredients
- 1 1/2 cups regular all purpose flour
- 3/4 cup white granulated sugar
- 1/4 tsp salt
- 2 tsp baking powder
- 1 egg
- 1/3 cup tasteless oil like canola (NOT olive oil)
- 1/2 cup milk
- 1 tsp vanilla (optional)
- 6-8 ounces fresh blueberries
Instructions
- Mix dry ingredients together in a bowl (flour, sugar, salt, baking powder)
- Mix wet ingredients together in a 2 cup measuring cup (oil, milk, egg, vanilla)
- Pour wet ingredients into dry ingredients and mix with a wisk or fork until it just comes together. Do NOT overmix. It will be thick, sticky and wet.
- Fold in blueberries.
- Use an ice cream scopper to scoop dough into cupcake tins lined with cupcake liners. (This makes cleanup so much easier).
- You will get between 8-10 muffins depending on the size of your cupcake tin.
- Optional: sprinkle sugar (white or turbinado) on top of the muffin before cooking to give it a crunch.
- Bake for 20 minutes at 400 degrees.
