Easy Tater Tot Breakfast Casserole
This tater tot breakfast casserole is fun and tasty!
It is a popular recipe in our home. All the kids (and adults) like it.
It has breakfast meat, eggs, cheese – all topped with crispy tater tots!
It is also very easy to make.
It can be made the night before and baked in the morning.
Ingredients:
Recipe for a 9×13 baking pan:
1 bag of frozen tater tots (32 oz will completely fill a 9×13 pan, half a bag will cover the casserole with spaces between the tots)
4 eggs
1 cup milk
breakfast meat: 1 package of breakfast sausage about 10-16 oz or enough diced ham to cover the bottom of the baking dish
1-2 tablespoon of maple syrup
2 cups shredded cheddar
1/2 tsp salt (use less of using ham which can be salty)
1/8 tsp pepper
1/2 tsp onion powder
pinch of red pepper flakes (optional)
1 tsp fresh chives or fresh parsley (optional)
butter or oil to grease the baking dish
Directions:
1- Grease or butter a 9×13 baking pan
2- Prepare breakfast meat of choice: either dice up pre-cooked ham or fry broken up sausage meat in a pan
4- Add maple syrup to the meat stir it about
3- Spread the meat on the bottom of the baking pan.
5- Sprinkle half the shredded cheese over the meat
6- Mix eggs, milk, salt, pepper, and onion powder in a separate bowl, then pour evenly over the meat in the baking pan.
7- Place a layer of tater tots on top of the egg mixture. You can tightly pack the tots if you really like tots, or space them out for fewer tots.
8- Sprinkle the remaining cheese over the tater tots.
9- Bake at 350 degrees for 45 minutes
The recipe can be adjusted for a 9×9 baking dish by using 3 eggs, 1+ cups of shredded cheese, 9 oz breakfast meat, half a bag of tater tots. Halve the salt amount also. Cook the same as above.
