Disney’s Fried Pickle Recipe

These fried pickles have been sold at the Carnation Cafe on Main Street USA in Disneyland since 2012.
This recipe is from the WDW Parks Blog.
I tried this with my kids. It was easy and the result was tasty and fun.
We started frying other foods as well because we had leftover panko. Our favorite was frying mozzarella sticks (they should be cold before frying).

Disney's Fried Pickle Recipe

Equipment
- pot or frying pan large enough to lay a pickle in
- slotted spoon or slotted spatula
- 3 small bowls
Ingredients
- FRIED PICKLES
- 16 oz jar of dill pickle spears, about 12 pickles (should be uniform in size; cut in half widthwise, if necessary)
- 2 cups canola oil to fry the pickles in
- 2 eggs beaten
- 1/2 cup flour
- 1/3 cup parmesan cheese grated
- 1 cup panko bread crumbs
- 1/2 tsp salt
- DIPPING SAUCE 1
- 1/2 cup mayonnaise
- zest of 1/2 lime
- 3 tsp lime juice
- 1/2 tsp garlic powder
- ZESTY DIPPING SAUCE OPTION
- 1/3 cup mayonnaise
- 1/2 cup ranch dressing
- 1.5 tsp lime juice
- 1 pinch black pepper
- 1/8 tsp course salt
- 1.5 tsp siracha sauce
Instructions
- Prepare the Dipping Sauce:Combine all the ingredients in a small mixing bowl, whisking well.Put sauce in the refrigerator until ready to use.
- Make the Pickles:Using caution, pour oil into a large cold pan and heat to 365°F.
- Prepare the 3 bowls.
- Put flour in one bowl.
- Beat the eggs in a second bowl
- Mix the panko, parmesan cheese, and salt in a 3rd bowl.
- Lightly dredge each pickle spear in the flour bowl first.
- Then dip the dredged flour pickle into the whisked eggs, tossing gently to coat.
- Then move the pickle to the bread crumb mixture to coat with bread crumbs
- Place breaded pickles on a tray and repeat steps until all pickles are breaded.
- Pan of hot oil: When I made the pickles, I used a small pan with enough oil to fully cover the fried pickle. The oil was at a medium to high heat. You can drop a small drop of water into the oil to test the temperature - if it sizzles, the oil is ready.Carefully place breaded pickles in a skillet and fry until golden brown, 1 to 2 minutes, turning once if the oil does not cover the pickle.I used a large slotted spoon to gently place the coated pickle in the oil. The pickle browned in under 30 seconds because my oil was hot. I lifted the pickle out with the same slotted spoon and placed it on a paper towel.
- Remove the pickle with a slotted spoon or frying implement from the oil and drain on paper towels.
- Serve immediately with zesty house sauce.
