Honey Coriander Chicken Wings from Ohana at Disney’s Polynesian Village Resort
Serves 4 to 6


 

WDW just released this recipe today on their WDW Parks Blog Site.

If you have ever eaten at Ohana, you will remember these wings.

CORIANDER CHICKEN WINGS MARINADE

  • 4 pounds chicken wings or drumettes, patted dry
  • 1 tablespoon coarse salt (kosher salt) or 1 tsp of regular salt
  • 2 tablespoons paprika
  • 2 tablespoons sugar
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon turmeric or can substitute cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 4 tablespoons canola oil

HONEY WING SAUCE

  • 1 tablespoon chili powder
  • 1/2 teaspoon ground ginger
  • 1 tablespoon ground coriander (dried cilantro)
  • 2 tablespoons lime juice
  • 1/2 cup soy sauce
  • 1 cup honey – (or can consider substitute of 3/4 cup brown sugar if you don’t have honey)
  • 2 tablespoons cornstarch mixed into 3/4 cup of COLD water

COOK THE CORIANDER WINGS:

  1. Preheat oven to 475°F, with the oven racks in upper and lower thirds.
  2. Line two rimmed baking sheets with foil and spray with nonstick cooking spray.
  3. Combine all the marinade ingredients except the chicken in a large glass bowl; stir to combine.
  4. Add chicken to the marinade and toss to coat.
  5. Divide the chicken in a single layer between the prepared baking sheets and bake until browned and completely cooked through, about 35 minutes, rotating baking sheets on racks and turning chicken halfway through cooking.

PREPARE THE WING SAUCE:

  1. While wings are baking, combine the sauce ingredients in a small saucepan over medium-high heat.
  2. Bring to boil, stirring occasionally, until liquid thickens and reduces to a syrup, about 5 minutes.
  3. Remove from heat and cool for 10 minutes.
  4. Brush or toss baked chicken with wing sauce to coat.
  5. Serve with remaining wing sauce on the side or with preferred dipping sauce.
